    At Hyatt Place Nairobi Westlands & Hyatt House Nairobi Westlands, we are looking for Commis – Butchery who will be responsible for preparing and processing all meats, poultry, and seafood for the kitchen’s needs. This role requires expertise in portioning, trimming, and deboning, while adhering to quality, hygiene, and safety standards.

    Key Responsibilities:

    • Prepare cuts of meat, poultry, and seafood per menu requirements.
    • Proficient in deboning, trimming, portioning, and marinating.
    • Maintain freshness and prevent contamination.
    • Monitor inventory and report shortages.
    • Ensure proper storage and rotation (FIFO).
    • Assist with ordering and inspecting deliveries.
    • Maintain consistent portions to control costs.
    • Minimize waste and optimize yields.
    • Follow HACCP guidelines and maintain a clean, sanitized butchery area.
    • Monitor refrigeration conditions.
    • Collaborate with chefs and kitchen sections.
    • Mentor junior staff and ensure smooth operations.
    • Maintain butchery tools and report issues.
    • Ensure meat quality meets kitchen standards and specific customer requests.
    • Follow established protocols, safety guidelines, and standard operating procedures while working alongside colleagues to ensure a safe and efficient work environment.
    • Encourage compliance with safety standards and best practices among colleagues, emphasizing the importance of safety in all tasks.
    • Treat colleagues with respect, professionalism, and courtesy at all times, creating a positive work culture within the engineering department.

    • Carries pans, kettles, and trays of food to and from workstations, stove, and refrigerator.

Primary objective is to craft a diverse range of high-quality cocktails, mocktails, and other beverages, adhering to established recipes and maintaining consistency.

    Key responsibilities include:

    • Be familiar with all food and beverage items on the outlet menu.
    • Prepare and serve beverages according to the standard required.
    • Set up, stock, clean, and maintain the bar and beverage preparation area.
    • Prepare the outlet for operation, including mise-en-place, setting and resetting tables, light cleaning, and other assigned tasks.
    • Take food and beverage orders from guests, up selling wherever possible.
    • Follow standard recipes and minimize waste to help ensure that the outlet’s beverage cost is in line with budget.
    • Be flexible wherever possible in meeting special requests from guests for specific beverage preparation methods and ingredients.
    • Order beverage ingredients based on outlet par stocks and as prescribed by the Manager.
    • Utilize the outlet point-of-sales system as prescribed. Computes bills, accepts payments, and performs cashier duties.
    • Verifies cash received and credit card validity, adhering strictly to finance policies and procedures.
    • Assist in service when needed and perform any other duties assigned by team leader/Manager.
    • Complete opening and closing duties as assigned.
    • Follow presentation guidelines as established by the Manager.
    • Always maintain the assigned station/section in a clean and orderly manner.
    • Ensure that all company minimum brand standards are implemented, and that optional brand standards are implemented where appropriate.
    • Responsible for inventory-taking as required.

    • Check the item expiry dates during collection of store requisitions and ensure they are in good condition before receiving them.
    • Track item expiry within the outlet and ensure procedures regarding expiry control are honoured to avoid losses and for the safety of consumers of the food and beverage items.
    • Serve food and beverages to guests, according to the established standards of performance and service sequence established for the outlet.
    • Handle all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.
    • Align all day-to-day functioning of the department/division consistent with Hyatt’s Global Privacy Policy.

    Qualifications

    Security Team Leader

    At Hyatt Place Nairobi Westlands & Hyatt House Nairobi Westlands, we are looking for Security Team Leader who will be responsible for ensuring the smooth running of all operational procedures within the security and loss prevention department, in relation to other departments within the hotel.

    Key Responsibilities:

    • Perform daily control room tasks with high integrity and efficiency
    • Monitor CCTV and report any unusual activity to the Line Manager/Duty Security Officer
    • Respond promptly to radio checks and keep accurate records of all communication.
    • Conducts enquiries and checks on all security, fire and alarm activation related incidents and submit initial reports.
    • Assists in the investigation of any accidents and security incidents involving hotel guest and employees.
    • Questions any suspicious character in a polite manner; deny entry if the subject is not able to provide reasonable reply; requests for assistance immediately if the situation escalates/deteriorates.
    • Monitor and ensure employee bag checks and periodic locker searches and ensures that they are carried out according to the hotel’s policy and procedures.
    • Keep a record of any incidents and report these to the Assistant Security & Loss Prevention Manager / Security & Loss Prevention Manager
    • Monitor vehicle and staff movements
    • Monitor the external security situation and provide the best routes and road status to hotel drivers
    • Answer all the calls appropriately and direct them to the right department promptly and courteously
    • Identify and recommend changes to improve our security operations
    • Conducts rollcall/daily briefing during each shift on the hotel’s activities/functions of the day to the security officers 15 minutes before the commencement of their duties.
    • Assists/Organises the Security Fire Fighting Team in the event of an emergency
    • Ensures all Fire Exits are always clear from obstruction
    • Assists management and enforcement offices in emergency situations
    • Any other reasonable duties as assigned by Management from time to time.

    Qualifications

    • Diploma or Degree in Security Management or its equivalent
    • 2+ years of experience in supervision and control room operation, preferably in a hotel environment with proven track record
    • Certified First Aider and Fire Marshall
    • Experience using relevant technology and security equipment
    • Ability to carry out quality investigations and reporting
